The lentil (Lens gender) is a legume known since antiquity. It is an annual dicotyledonous species, much cultivated for the edible grain, rich in protein. There are different varieties of lentils. Lentils are part of the pulses appreciated in Europe but world production is not high: 3,841,883 t (2004). As evidence of the biblical story of Esau in Genesis, the consumption of lentils, dates back to the birth of agriculture in Mesopotamia. The lentil is a herbaceous annual plant, high by 20 cm to 70 cm. The stems are straight and branched. Its leaves alternate, compound pinnate, count from 10 to 14 opposite leaflets, oblong, and usually end with a tendril simple or bifid. Are fitted at the base of stipules toothed. The flowers, corolla papilionacea typical of the subfamily Faboideae, are creamy white or pale blue and gathered in clusters of two to four. The cup is regular, five teeth thin and relatively long. The summer bloom is between May and July. The fruits are flattened pods, short, containing two seeds from the characteristic shape of a slightly convex lens. The color of the seeds varies with the variety from the paler (light green, blond, pink) to dark (dark green, brown, purple ...). The species include four major subspecies: Lens culinaris subsp. culinaris (cultivated lentil), sometimes considered a distinct species; Lens culinaris subsp. odemensis; Lens culinaris subsp. orientalis; Lens culinaris subsp. Tomentosus. Brown lentils, especially that found in a box, the red lentils (yellow or orange), used in Asian cooking, lentils, green lentils like green lentils green Villalba and Altamura, coral or pink lentils, which is red, but always sold shelled, lentils blonde, which is the biggest, like the pale pink lentils lentillon Rose Champagne (France).
